Maybe we should do a quick get together for lunch or dinner or drinks before hitting some prime tourist spots and making plans.

Maybe make use of the fact we will be free when most people are at work to head to the water park and maybe deal with less crowds as well as beat the heat?

I am generally in favor of this plan. And like everyone else, totally free.
A few other ideas: National Palace Museum Weekend Jade/flower market
Day trips: Wulai is an easy day trip, and has hot springs and aboriginal culture stuff, including interesting food (bamboo rice, wild boar sausage, etc.).
Jiufen is a slightly more challenging day trip (longer bus ride), but has cool stuff, like the old gold mine and a fancy house built for visiting members of the Japanese imperial family during the occupation, and also a lot of old buildings and alleys with countless snack stalls. And it's up on the side of the mountains, so you get some gorgeous views of the coast from the gold museum park.
